The focus on this class is how to create the classic Gateau Basque (not to confuse with the Basque Cheesecake!). You will learn the the fundamental of the classic crumbly French pastry crust by hand or with a mixer. Chef Sonia will show you how to create a silky crème patissiere (French vanilla custard) or for those who enjoy the cherry jam version, she will demonstrate the different ways to create the jam filling with the use of pectin or starch.
