In this class, you will learn about chocolates, what the cocoa content means, and participate in a chocolate degustation where we will discuss flavour profiles. The focus on this class is how to make simple velvet chocolate truffles. Learn the fundamentals of chocolate ganache and how to create your own flavours through infusions then take home your truffles in a beaufitul gift box to share with your family and friends. Chef Sonia will also go over tempering techniques to create different types of decorations from chocolates.
