This class focuses on the techniques to create Dacquoise - a famous French almond sponge base often used with seasonal fruits and custard. This speciality is made using just ground almond and egg whites, occasionally with the addition of a small quantity of starch. Chef Sonia will show you how to create this simple yet elegant dessert at home to impress your family and friends. She will show you how to create a full burst of flavours through the use of fruit purees to enhance the flavour of the cake and how to make your own variations of fillings and toppings with the same Dacquoise base.
