Everyone's favourite cake! The focus on this class is how to create a naturally aerated Genoise sponge without using any baking powder. The sponge mixture will be so light that it can be pour into a mould or piped out to make ladyfingers. Learn how to create a smooth velvety mascarpone cream and how to flavour your own coffee syrup for embibing. Chef Sonia will teach you ways to create different forms of this famous dessert, in a cake format, in a glass or as a plated dessert. Please note there is alcohol in this recipe.
